He is an award-winning Master Chef and created the Tonkotsu secret recipes when he opened his first restaurant in 2008. With his years of experience in Japan’s most difficult dining environments and the family tradition of his parents’ ramen/sushi shops, his restaurants are now flourishing all over the globe.

Kousuke Yoshimura will lead a team of Japanese experts who have been working with him for more than 8 years, including Sous Chefs Syota Okayama (Japan) and Takumi Yoshinaga (Japan). They will train and calibrate all kitchen equipment, from noodles to gyoza-making machines. He will visit every shop he opens to ensure the best quality ramen.

Hakata Gensuke, a Japanese noodle shop located at 168 Russell Street, Melbourne CBD. Gensuke specializes in pork bone noodles soup and dipping noodles, also known as Tonkotsu Ramen or Tsukemen. Their inventor and owner, Master Chef Kousuke Yamamura, has brought Hakata tonkotsu Ramen to Australia.

To ensure a delicious soup, the Ever Important Soup – Gensuke tonkotsu uses “Yobimodoshi”, which is a master stock method. This allows for a rich flavor that can only be found at Japan’s finest ramen restaurants. They will produce hundreds of liters per day using 7 high-end stock cookers to feed their hungry guests. Their chefs use only the best quality fresh pork bones from trusted Australian suppliers. They will also inspect and eat a full bowl every day to ensure that it is of the highest quality before they serve their guests.

Hakata Gensuke Noodles – Hakata Gensuke noodles are made in house using the same equipment as every ramen shop in Hakata Gensuke. Their noodle master will closely monitor every stage of the Gensuke flour blend’s production. This noodle is slightly chewier and flatter than traditional Hakata noodles. Customers will be able to select the firmness of the noodles and order additional servings if necessary. All ingredients, including flour, are from Australia.
